Silverbeet and feta quiche

Ingredients

  • 1 medium orange kumara

  • 4 large silverbeet leaves

  • 1/2 red onion

  • 1/2 red capsicum

  • 8 eggs

  • 1/4 block feta cheese

  • Salt & pepper

Directions

Preheat oven to 180 degrees. Peel kumara into thin slices. Line the bottom of a round baking dish (mine was about 25cm x 25cm approx) with the thin slices. Chop up silverbeet leaves and place on top of the kumara. Dice red onion and slice up capsicum and place on next. (You could add other veges if you wanted to, these are just the ones I chose) Whisk the eggs, add salt & pepper and tip over the vegetables. Put cubed feta cheese on top and bake for approx 40 mins or until kumara is soft. Serve with a green salad. Keep the leftovers in the fridge for a healthy lunch the next day.
