Carrot cake overnight oats
Ingredients
1 medium carrot, grated
1/2 C rolled oats
1/2 C plain yoghurt
1/4 C milk of your choice
1 tsp pure maple syrup
1/2 tsp cinnamon
2 Tbsp shredded coconut
1 Tbsp raisins
Toppings: 1 Tbsp walnuts and 1 Tbsp raisins, and a dash more milk if needed.
Directions
Mix together all the ingredients into a jar or a bowl and leave in the fridge over night. Before serving add the few toppings. A delicious healthy breakfast.
