Raw Mushroom Salad

Ingredients

  • 1 x 400g bag white button mushrooms

  • 1/2 C Olive oil

  • 1/2 C lemon juice (approx. 3 big lemons)

  • 1/4 red onion, finely sliced

  • Salt & pepper to taste

  • Parsley to garnish

Directions

Wipe any dirt off mushrooms with a paper towel, leave the stalks on and then thinly slice. Combine mushrooms along with all other ingredients in a bowl, mix well. Serve straight away, or cover tightly and refrigerate. The salad will keep for 8 hours. Mix it up again gently, before serving.
