Poppyseed Chicken

Ingredients

  • 2 skinless chicken breasts

  • 2 Tbsp poppy seeds

  • 2 C panko crumbs

  • 2 free range eggs

  • 1 tsp mustard (I used Colemans)

  • 2 Tbsp oil for in the pan

  • Pinch of salt

Directions

To make the eggwash, whisk together the eggs, mustard and salt in a bowl. On a separate plate, mix poppyseeds and panko crumbs. Slice the chicken breasts into thin strips and coat in the eggwash, then in the crumbs. Heat oil in a large frying pan and fry chicken pieces until golden and cooked. An easy dinner and a healthier alternative to takeaways! Serves 4.
