Pumpkin & Quinoa Bake
Ingredients
1/2 butternut pumpkin, grated (about 2 1/2 cups)
3/4 C raw white quinoa
1 red onion, finely chopped
2 garlic cloves, crushed
2 tsp himalayan salt
2 tsp mixed herbs
1 tsp paprika
1 & 1/2 C of water (to cook quinoa)
4 eggs
1/2 C grated cheese
Directions
Pre heat the oven to 180 degrees. Cook the quinoa in the water, following packet directions. Rinse thoroughly once cooked. Mix everything together in a large bowl. Pour into an ovenproof dish, bake until the middle is cooked—approx. 45 mins. Serve with salad. Serves 4-6.
