Pumpkin & Quinoa Bake

Ingredients

  • 1/2 butternut pumpkin, grated (about 2 1/2 cups)

  • 3/4 C raw white quinoa

  • 1 red onion, finely chopped

  • 2 garlic cloves, crushed

  • 2 tsp himalayan salt

  • 2 tsp mixed herbs

  • 1 tsp paprika

  • 1 & 1/2 C of water (to cook quinoa)

  • 4 eggs

  • 1/2 C grated cheese

Directions

Pre heat the oven to 180 degrees. Cook the quinoa in the water, following packet directions. Rinse thoroughly once cooked. Mix everything together in a large bowl. Pour into an ovenproof dish, bake until the middle is cooked—approx. 45 mins. Serve with salad. Serves 4-6.
