Pumpkin & Coconut Soup

Ingredients

  • 1 Tbsp curry powder

  • 1 kg pumpkin, peeled and cubed

  • 1 large sweet potato, peeled & cubed

  • 1 large potato

  • 5 C hot water

  • 1 425g can Coconut cream

  • 1 tablespoon coconut oil

  • 1 brown onion, finely chopped

  • Salt and pepper to taste

Directions

Heat oil in a large pot. Add onion, cook for 5 minutes until softened. Add curry powder, cook for 2 minutes. Add pumpkin, sweet potato, stirring to coat in curry powder. Pour in water, bring to the boil. Reduce heat and simmer until veggies are cooked. Stir through coconut cream, cook for a further 5 minutes. Remove from heat and blend either with a stick blender or I waited until the soup had cooled a bit and then put it into my Nutri Ninja to whizz it up to smooth. Add salt and pepper to taste.
