Healthier Toasted Muesli

Ingredients

  • 3 C rolled oats

  • 1/4 C sunflower seeds

  • 1/4 C hazelnuts, chopped

  • 1/4 C pumpkin seeds

  • 1/2 C dessicated coconut

  • 1/2 C dried apricots, chopped

  • 1/4 C honey

  • 1/4 C coconut oil

  • 1 tsp organic maple syrup (I used Ceres)

Directions

Preheat oven to 180 degrees. In a saucepan, add honey, oil & syrup and bring to the boil, then simmer, stirring as it thickens up. In a large bowl combine oats, coconut, seeds, nuts. Pour the honey mixture in and combine to coat. Tip mixture into a lined roasting dish. Bake for 20 mins, being sure to take out and turn over every 4 to 5 mins (mixture will brown quickly on the top and will burn if you leave it). Once all toasted, add in chopped apricots. Allow to cool. Serves 6.
