Nacho bowl

Ingredients

  • 1 tbsp oil

  • 1 onion, chopped

  • 500g lean beef mince

  • 2 cloves garlic, crushed

  • 1 tsp each of paprika, cumin, garlic powder, coconut sugar, salt

  • 1⁄2 tsp each chilli powder, rosemary

  • 400g can chopped tomatoes

  • 2 tbsp tomato paste

  • 1⁄2 C water

  • 440g can chilli beans

Salad ingredients—2 carrots, grated. 1 1⁄2 C grated tasty cheese 1 avocado, cubed

2 tomatoes, cubed 1⁄2 cucumber, cubed 1 lettuce heart, any leafy variety e.g. ice berg


Directions

Heat oil in a frying pan. Cook onion for 5 minutes until soft. Add mince and garlic. Stir until mince is browned. Add all of the spices and cook for 1-2 mins until fragrant. Add tomatoes, tomato paste and water. Simmer for 30-35 mins until thick. Add beans. Stir for 1-2 minutes. Prepare salad ingredients for nacho bowl. Arrange each vegetable & grated cheese in cases of lettuce leaves around the perimeter of the serving bowl. Spoon mince into the middle case.
