Snickers slice

Ingredients

Base

  • ⅓ C LSA

  • ⅓ C vanilla flavoured protein powder - I used Nuzest

  • ¼ C coconut flour

  • 6 Tbsp smooth peanut butter - I used Pics

  • 2 Tbsp coconut oil, melted

Gooey caramel filling

  • ½ C crunchy peanut butter

  • ⅓ C maple syrup - make sure it’s pure Maple Syrup

  • ¼ C coconut oil, melted

  • 1 tsp vanilla extract

  • ½ C roasted cashews, roughly chopped

  • Pinch of salt

Chocolate topping

  • ¾ C dark chocolate, melted - I used Whittakers dark ghana 72% cocoa


Directions

Line a loaf tin with baking paper. Combine the first 4 base ingredients. Mix thoroughly. Add in 1 Tbsp of melted coconut oil at a time. Mixing with your hands is easiest at this point, once the mixture starts to combine when squeezed between your hands it is the right consistency (you may not need the full 2 Tbsp of melted coconut oil). Press the base mixture into the bottom of our loaf tin, freeze for 1 hour.

Next, mix all of the gooey caramel  filling ingredients together until combined well and  creamy. Pour evenly onto the base layer. Return to the freezer for an hour to set. To make the topping melt chocolate in the microwave and pour on top of the slice, return to the freezer until chocolate is set. Cut into small pieces. Makes approximately 12-16 delicious morsels. Store in the fridge.
