Low carb pizza

Ingredients

  • 1 3/4 C grated mozzarella cheese

  • 85g almond meal (just under 1 cup)

  • 2 Tbsp cream cheese

  • 1 egg

  • Pinch of salt

  • 1/2 tsp dried rosemary or garlic powder or other flavourings (optional)

  • Your choice of pizza toppings eg pepperoni, capsicum, spinach, red onion, feta, pineapple

  • Good squirt of pizza sauce (I used store bought to be easy, but you could make your own)

Directions

Mix grated cheese and almond meal in a microwaveable bowl. Add cream cheese. Microwave on HIGH for 1 minute. Add egg, salt, rosemary (or any other flavours), mix gently. Place between 2 pieces of baking paper and roll into a circular pizza shape. (f the mixture hardens up at all, pop back into the microwave to soften up, but not too long so you don’t cook the egg.) Remove the top paper. Make fork holes over the pizza base to ensure it cooks evenly. Slide baking paper with the pizza base onto a baking tray (or pizza stone), bake for 12 mins approx or until brown. Once cooked, remove from the oven and add pizza sauce and toppings (make sure any meat is pre cooked as you’re only putting it back in to heat up the toppings and melt the cheese. Bake again for 5 minutes.
