Easy keto cauli bake

Ingredients

  • 1 medium cauliflower, cut into florets

  • 2 cloves garlic, minced

  • 1 1/2 Tbsp olive oil

  • 1 1/2 C milk

  • 1 1/2 Tbsp corn flour

  • 1/3 C Mayo (I used Best Foods)

  • 4 bacon slices, diced and cooked

  • 1 Tbsp chopped parsley

  • 1/4 C grated cheese to sprinkle on top

  • Salt & pepper to taste

Directions

Preheat oven to 180 degrees.  In a pot, blanch cauliflower for 2 mins, set aside.  To make the sauce, in a large pot heat olive oil and add garlic, cook for 30 seconds.  Add cornflour and stir, add milk and bring to a low simmer, give it a whisk if needed to get rid of any lumps.  Stir in the mayo, salt & pepper.  Add drained cauliflower and toss, transfer to a casserole dish.  Bake for 20 mins.  Remove, toss the cauliflower around again and top with bacon, grated cheese and parsley, and then back in the oven for another 10 minutes to brown up the top.
