Chicken, Zucchini & Corn Soup

Ingredients

  • 50g butter

  • 1 large onion, finely chopped

  • 2 cloves garlic, crushed

  • 3 medium zucchini, grated

  • 6 C chicken stock

  • 3 x 420g can creamed corn

  • 1 cooked chicken, ripped up

  • 1/2 C cream (optional)

  • Salt & pepper to taste

Directions

Melt butter in a large saucepan, cook onion and garlic, stirring until onion softens. Add zucchini, cook stirring for 1 minute. Add stock, bring to the boil. Stir in corn, chicken, reduce heat, Stir in cream just before serving. Serves 8. This soup freezes well too (don’t add cream if you’re going to freeze).
