Creamy Cauli Soup

Ingredients

  • 1 large onion, diced

  • 60g butter

  • 1 medium sized cauli, chopped up

  • 1/2 C milk

  • 1/2 C cream

  • 4 C water, extra if needed

  • Salt & pepper to taste

Directions

Cook the onions in the butter until they begin to soften. Add all the remaining ingredients, bring to the boil and then simmer until the cauliflower is cooked. Allow to cool and then blitz in a blender. Serve with a piece of wholegrain toast, or make the seed crackers recipe, they are also yummy to dunk into it! Serves 4-6.
