Chicken cauliflower fried rice

Ingredients

  • 3 boneless skinless chicken breasts, diced

  • 2 Tbsp sesame oil (maybe a bit extra)

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • 1 large head of cauliflower

  • 2 carrots finely diced

  • 1 C frozen edamame

  • 5 stalks green onion, sliced

  • 3 Tbsp soy sauce

  • 1 Tbsp peanut butter

  • 1 Tbsp chilli paste

  • 3 eggs

Directions

Heat a large pan, add sesame oil.  Season chicken with salt & pepper, then place into the hot oil.  Cook until almost cooked through, then remove and set aside.  To make cauliflower rice, pulse in a food processor (or grate with a grater) into rice size pieces.  Add to the same pan, add a little more sesame oil if needed. Cook until tender.  Remove from the pan  and set aside. Add carrots, cook until tender, followed by soy sauce, peanut butter, chilli paste and stir to combine.  Add frozen edamame, garlic, green onions, cook until heated through.  Return the cauli rice and diced chicken back to the pan, stir to combine.  Push to the side and crack in the 3 eggs.  Cook and scramble the eggs, then mix and combine.  Serve hot, add some spring onions to the top if desired.  Serves 4.
