Thai chicken lettuce cups

Ingredients

  • 1kg chicken mince

  • 1 x red & 1 x green capsicum, finely chopped

  • 2 garlic cloves, crushed

  • 2 tsp ginger, grated

  • 1 Tbsp lemon & 1 Tbsp lime juices

  • 2 Tbsp soy sauce

  • 2 Tbsp sweet chilli sauce

  • 3 Tbsp coconut oil for frying

  • Fresh mint leaves

  • Chopped up diced cucumber

  • Iceberg lettuce leaves

Directions

In a small bowl add the lemon & lime juices, soy sauce and sweet chilli sauce and set aside.  Add coconut oil to a large frying pan, heat on medium high. Add in the capsicum, ginger and garlic and cook for a few minutes.  Add chicken mince, using a wooden spoon to break it up as it cooks. Once cooked add the sauce, cook for a further 2 -3 minutes.  Serve in lettuce cups, topped with torn mint leaves and diced up cucumber.  Serves 4-6.
