Kumara & coconut green curry

Ingredients

  • 2 Tbsp olive oil

  • 1 Onion, diced

  • 1 Tbsp fresh ginger, sliced

  • 1 garlic clove, crushed

  • 1 Tbsp Thai green curry paste

  • 1 large orange kumara, diced

  • 1 can coconut cream

  • 1 C vegetable stock

  • Approx 1 C green beans, cut into 3cm pieces

  • 1 C spinach leaves, (could add 2 if you wanted)

  • Approx 2 C cauliflower florrets

  • Salt & pepper to taste

Directions

Heat oil in a pan, saute onion, garlic, ginger & curry paste for 3-4 mins over medium heat until soft.  Add kumara, cauliflower, beans & stock, cook for a few minutes.  Add coconut cream and spinach, simmer until veges are cooked through.  Serve with brown rice or make cauliflower rice in the ’Creative with Cauliflower’ recipe page.
