Kumara & coconut green curry
Ingredients
2 Tbsp olive oil
1 Onion, diced
1 Tbsp fresh ginger, sliced
1 garlic clove, crushed
1 Tbsp Thai green curry paste
1 large orange kumara, diced
1 can coconut cream
1 C vegetable stock
Approx 1 C green beans, cut into 3cm pieces
1 C spinach leaves, (could add 2 if you wanted)
Approx 2 C cauliflower florrets
Salt & pepper to taste
Directions
Heat oil in a pan, saute onion, garlic, ginger & curry paste for 3-4 mins over medium heat until soft. Add kumara, cauliflower, beans & stock, cook for a few minutes. Add coconut cream and spinach, simmer until veges are cooked through. Serve with brown rice or make cauliflower rice in the ’Creative with Cauliflower’ recipe page.
