Carrot & beetroot raw winter salad

Ingredients

  • 2 carrots

  • 2 medium sized beetroot

  • 1 C raisins

  • 1/2 C pumpkin seeds

  • 1/2 C sunflower seeds

  • 2 Tbsp sunflower seeds & leave a few to garnish at the end

  • Dressing: 2 mandarins juiced (about 1/2 a cup, 2 Tbsp avocado oil

Directions

Peel and grate the carrot and beetroot. Place everything into a big bowl and mix together. When serving place dressing ingredients into a jar and shake, drizzle over each individual serve and keep the undressed salad in the fridge for later. I served this next with roast chicken!
