Warm Roast Vege Salad
Ingredients
500g baby red potatoes, washed and halved
500g orange kumara, peeled and cut into 4cm pieces
4 garlic cloves, peeled
2 Tbsp olive oil
1 red capsicum, sliced thickly
1 large red onion, cut thickly
1/4 C pine nuts
2 C baby spinach leaves
50g feta cheese, chopped into cubes
DRESSING ingredients: 2 Tbsp lemon juice, 1/4 C olive oil, 2 tsp wholegrain mustard, 2 Tbsp chopped fresh oregano leaves.
Directions
Preheat oven to fan bake 200 deg. Place potato, kumara, garlic & oil in a bowl. Toss well. Place mixture, single layer onto a large oven tray. Season with salt & pepper. Roast for 30 mins. Take out and turn. Add capsicum & red onion to tray. Roast for approx 20 mins, add pine nuts to tray. Continue to roast until veges are browned and tender. For dressing, add all ingredients to a jar and shake to combine. Place spinach, feta and vegetables in a large bowl, tip over dressing, toss. Serves 4-6.
