Vege Packed Easy Quiche

Ingredients

  • 8 eggs

  • 1⁄2 C milk

  • 1⁄2 C buckwheat flour

  • 1⁄2 tsp baking powder

  • 1 large kumara, cubed and cooked

  • 1-2 C cooked spinach / silverbeet / kale

  • 1 large onion, diced

  • 1 C grated cheese

  • Salt & pepper

Directions

Beat together the eggs, milk, salt, pepper, flour and baking powder in a bowl until combined.

In another bowl mix together the onion, cooked kumara, green veggies and grated cheese.

Line a tin with baking paper (or spray dish with oil). Tip the vege mixture into the tin and spread evenly. Then pour egg mixture over evenly. Bake at 180 degrees for 25 mins or until lightly browned and set in the centre. Let stand for 10 minutes, then flip out and chop up on a board.

Tip – You could add in whatever veggies you liked, or left over protein. The more ingredients you add, just add in an extra egg and a bit more milk, it is a very adaptable recipe and kids love it too.
