Seriously easy quinoa salad

Ingredients

  • 1 cup uncooked quinoa

  • 2 cups water

  • 1/2 cucumber, diced

  • 1 cup chopped capsicum

  • 2 cups chopped leafy greens, bok choy, spinach, micro greens, kale etc…

  • 1/2 cup nuts and seeds, walnuts, pine nuts, cashews, sunflowers, pumpkin seeds etc…

  • 1/4 cup dried fruit

  • 1/2 cup finely chopped fresh herbs, any combination of parsley, basil, chives, dill, mint, coriander etc…

  • 1 can of chickpeas

  • Dressing ingredients - 1/4 cup olive oil, 1/4 cup apple cider vinegar (could use white vinegar), 1 tsp Dijon mustard, 1/2 teaspoon liquid honey, 1/2 tsp salt, 1/4 tsp pepper and the juice of half a juicy lemon.


Directions

Boil water, add 1 tsp salt and cook quinoa for 15 mins. Drain and set aside to cool.

In a large bowl combine all of the prepared vegetables, nuts/seeds, fruit and chickpeas. Next, make the dressing. In a jar combine the dressing ingredients and shake well. Add to the salad mixture along with cooked and cooled quinoa, combine well and serve.

This salad is so versatile, mix up the ingredients but keep the proportions the same and enjoy!
