Raw hot cross buns
Ingredients
1/2 cup almonds
1/2 cup pecans
1/2 cup cashews
100g desiccated coconut
1/2 cup softened dates
1 Tbsp nut butter
2 Tbsp rice malt syrup or honey
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp mixed spice
1/2 tsp ginger
1 tsp vanilla essence
Pinch of salt
Hot cross bun crosses—1 Tbsp coconut flour, 1-2 tsp plain flour, 2 Tbsp milk, 2 Tbsp liquid honey
Directions
To make the balls cover dates with boiling water, allow dates to soften for 10-15mins then drain off all liquid and add to the food processor. Add all other ingredients and blitz until it starts to come together and you can mould it into balls.
To make the cross decoration combine ingredients and mix well. Spoon into small snap lock bag, snip off a little corner and pipe crosses on to balls.
