Satay sauce

Ditch the nasty packet sauces and whip this up in 10mins, plus you’ll have leftovers for the another meal or two. Pour this delicious sauce on meat, vegetable kebabs or stir through stir fry veges. This is seriously good, you will love this satay sauce!

Ingredients

  • 1 onion, diced

  • 4 cloves of garlic, crushed

  • 1 thumb sized piece of ginger, zested

  • 1 tsp cumin

  • 1 tsp turmeric

  • 1 tsp coriander

  • 1 tbsp lemon grass paste

  • 1/2-1 tsp chilli minced or powdered

  • 1 C crunchy peanut butter

  • 2 tbsp honey or coconut sugar

  • 2 C water

  • 1 tsp salt

  • 1 tbsp soy sauce

  • 2 tbsp lemon juice

Directions

Fry the onion, garlic and ginger in a little bit of oil until soft. Add spices, herbs and chilli and fry until fragrant. Stir in the peanut butter, water, honey, salt, soy sauce and lemon juice. Bring to the boil and then gently simmer for 5 mins. It will continue to thicken as it cools. Add more water if it is too thick. Serve or store in the fridge for 5-6 days.

Tips:

  • Remember to peel your fresh ginger and store it in the freezer. It’s so much easier to grate and zest and it never goes soft like it does in the pantry.

  • Buy the tubes of herbs in the fresh produce section. Store them in the freezer so they stay fresh for longer.
