DIY stir fry sauce

This recipe creates a base flavour for a stir fry. You can add to the flavours by choosing some of the extra ingredients listed. You will also need oil for frying, around 500g of meat (mince, steaks, thighs, breast, finely chopped) or       seafood, around 3/4 C of vegetables per person plus your choice of healthy noodles, brown rice or cauliflower rice.

Ingredients

  • 3 Tbsp soy sauce

  • 1 1/2 Tbsp fish sauce

  • 1 1/2 Tbsp sweet chilli sauce

  • 1/3 C water

  • 1 Tbsp runny honey

  • 1 heaped tsp cornflour

Optional ingredients

  • 1 Tbsp fresh chilli finely chopped

  • 2-3 cloves garlic crushed

  • 1 Tbsp grated ginger

  • 1 Tbsp crunchy peanut butter

Directions

Basic stir fry method

Cook healthy noodles or brown rice as per packet instructions.

Heat oil in a large wok. Cook enough meat for your family. For more flavour add garlic, ginger and a little bit of salt if desired. Once cooked through remove from the wok and set aside.

Add a little more oil to the wok and stir-fry the vegetables, starting with the more denser varieties first. Don’t cook them for too long, 2-6mins will be enough or until they start to soften or wilt. Turn down to a very low heat while you make the sauce.

Combine all sauce ingredients and any optional extras in a bowl. Add the sauce and meat to the vegetables and stir well.

To serve, divide stir-fry among bowls and top with chopped coriander and peanuts.
