Parmesan & Pumpkin Fritters

Ingredients

  • 1 1/4 C grated butternut pumpkin

  • 1 egg, lightly beaten

  • 2 Tbsp milk

  • 1/4 C grated parmesan cheese

  • 3 Tbsp buckwheat flour

  • 1 Tbsp baking powder

  • Salt & pepper to taste

  • Oil for frying

Directions

Combine the egg, milk and cheese in a bowl. Add the pumpkin. Sift the flour, baking powder, salt & pepper and mix well.

Heat the oil in a large frying pan over medium heat. Fry heaped tablespoons of the mixture until browned on both sides and cooked in the middle.

Serve with a side salad.
