Cajun Lemon Olive Chicken

Ingredients

  • 8 free range chicken drum sticks

  • Cajun spice mix (or smoked paprika), 2-3 tspns or enough to cover chicken

  • 2-4 lemons (depending how lemony tasting you want it)

  • Pitted olives

  • Olive oil

  • Salt and pepper

Directions

Pre heat oven to 180 degrees. Place chicken in a baking dish, rub chicken with olive oil, spices, salt & pepper. Slice lemons into rounds 5ml thick. Spread lemons around chicken, along with desired number of olives (you can omit the olives if they’re not your thing). Bake until cooked, golden brown and lemons have caramelised. A lovely lemony sauce should form, (you can add chicken stock to this and heat sauce if you’d like it to go further). Serve, lemon slices and all, I eat the skins too! Serve with greens or your choice of sides.
