Kumara & Salmon Fritters

Ingredients

  • 1 medium sized orange kumara

  • 1 180g tin canned salmon (drained)

  • 1 egg

  • Chopped cooked broccoli (or any leftover veggies you have)

  • 1 tsp of smoked paprika

  • 1 tsp of cumin

  • Salt & Pepper

  • Wee bit of flour to bind

  • Wee bit of oil to fry in (any kind you like)

Directions

Boil the kumara until cooked, then mash.

Add in the drained salmon, egg, broccoli or any other veggies you want to put in. Add in the spices, salt & pepper and mix.

Add in a wee bit of flour so the mixture all binds together and it’s not too wet.

Make into patties ready to fry in a non-stick pan (or add a tiny bit of oil to fry in so they don’t stick), flip to cook both sides.

As per the pic I served with extra broccoli and then made a green salad too. Makes about 10 fritters.
