Kumara Cottage Pie

Ingredients

  • 800g prime beef mince

  • 2 C frozen mixed veggies

  • 2 large silverbeet leaves, chopped finely

  • 1 onion, diced finely

  • 1 stick celery, diced finely

  • 1 Tbsp crushed garlic

  • 1 can chopped tomatoes

  • 1 Tbsp mixed herbs

  • 1 Tbsp Rapeseed or high heat olive oil

  • 2 medium sized orange kumara, peeled & diced

  • 1 handful grated tasty cheese (optional)

  • Salt & Pepper

Directions

Heat oil in large non-stick fry pan, add in onion, celery, garlic and cook until clear. Add in mince, cook until browned, then add in all the other veggies, tomatoes, herbs and salt & pepper.

Meanwhile bring the kumara to the boil in a pot, once cooked drain off water and mash the kumara. Transfer the mince mixture into a pie dish, then spread the mashed kumara on top evenly. Sprinkle grated tasty cheese over the top.

Bake in the oven until the cheese melts and browns up a bit. Serve with other veggies of your choice or perhaps a salad! Makes one large pie, serves 4-6.
