Watermelon and feta salad

Watermelons are so cheap when they’re in season. This salad is really simple with no dressing as the watermelon is so juicy. Crunchy, salty, sweet and fresh, you will love it!

Ingredients

Salad ingredients

  • 1/2 a medium watermelon cut into cubes

  • 1/2 a bag of fresh rocket

    (if rocket isn’t in season try spinach, baby kale or a mix of the two)

  • 1/4 C pumpkin seeds

  • 20g crumbly feta

Directions

Heat the oven to 160C. Roast the pumpkin seeds for around 8mins or until they are slightly browned. Set aside to cool.

Place rocket on the bottom of a large serving dish. Cut watermelon into 2cm cubes and arrange on top. Top with the slightly cooled seeds along with the crumbly feta.
