Vietnamese rice paper rolls

Ingredients

  • Rice paper wraps

  • 2 Tbsp oil for cooking

  • 500g chicken mince

  • 1 white onion, diced

  • 2 cloves garlic, crushed

  • 1/2 red onion

  • 1/2 red capsicum

  • 1/2 yellow capsicum

  • 1 carrot

  • 1/2 cup peanuts, roughly chopped

  • 1/2 chilli (optional), fresh ginger and coriander (optional)

Directions

Heat oil, cook onion and garlic and then add chicken mince until cooked through. While cooking, slice up thinly red onion, capsicum, carrots, chop peanuts and anything else you want to add to your rice paper rolls. Add in chilli, fresh ginger and coriander to the mince mix (optional). Boil jug of hot water and pour some into a plate, place a rice paper wrap into the hot water for approx 30 seconds to soften. Take it out and lay on a flat board, add vegetables into the middle chicken mince and peanuts and then fold up at each end and roll, the rice paper will be sticky and hold together. This can be a bit fiddly! Dip in soy sauce and enjoy.. Makes approx 12 rolls.
