Two minute raw salad

I’m not even joking, the most muscle work in this salad is grating the courgettes. Paired with rocket and freshly cracked pepper your courgettes are taken to the next level. Simple and fresh, the perfect salad for busy lives.

Ingredients

  • 2-3 large courgettes

  • 1/2 red onion very finely sliced

  • Or 2 spring onions finely sliced

  • 1/2 block of feta crumbled

  • 2 tbsp olive oil

  • Juice of 1 large or two medium lemons

  • Salt and pepper

  • 1 bag of rocket

Directions

Combine the courgettes, red or spring onion, feta, olive oil, lemon juice, salt and a generous amount of pepper and mix well.

Add the fresh rocket and toss through. Serve!

Tip - I find rocket is a much better quality purchased from a fruit and veg shop instead of the common bagged variety from the supermarket.
