The best tomato salsa
Ingredients
1/2 green capsicum, finely chopped
1/2 red capsicum, finely chopped
1/3 C cucumber, finely chopped
4 tomatoes, chopped, seeds scooped out
2-3 garlic cloves, crushed
1-3 jalapenos, finely chopped
Small bunch coriander leaves and stalks, finely chopped
Juice of 1 lime
Salt and pepper to taste
Serves 5-6
Directions
Combine all of the ingredients together in a large bowl and mix well. Season with salt and pepper, taste, you may need more.
Cover and refrigerate for 30mins or overnight, this helps the flavours infuse.
Serve with Proper Crisps Tortilla Chips (all normal ingredients and made from corn not wheat, also gluten free) and enjoy with a beverage on warm summer nights. Serves 5-6.
Tip - Each jalapeno will had quite a bit of heat so adjust to suit your taste buds.
