Persimmon & feta salad
Ingredients
200g of salad greens such as rocket, watercress, spinach, lettuce
1/2 red onion finely sliced
300g feta cubed
2 persimmons washed
Creamy dressing ingredients:
3 Tbsp natural unsweetened yoghurt
1 tsp wholegrain mustard
1 garlic clove crushed
1 tsp liquid honey
1/4 C olive oil
2 Tbsp fresh herbs such as chives, parsley, oregano, marjoram, finely chopped
1 Tbsp lemon juice
Salt and pepper to taste
Directions
Arrange salad greens on a large platter. Scatter finely sliced onion and feta on top. Remove the leaves from the persimmons and cut in half, discard any pips. Slice into 1cm wide wedges and arrange on the salad. To make the dressing add all of the ingredients into a jar and screw the lid on tight, shake really well until combined and creamy. Just before the salad is served pour the dressing on top.
A beautiful autumn salad. Serves 4.
