Peanut butter fudge

Ingredients

  • 1/3 C Peanut butter (I used Pics crunchy)

  • 1/4 C coconut oil

  • 2 tsp vanilla extract

  • 3 Tbsp pure maple syrup

     

Directions

In a pot over medium heat, melt and mix together peanut butter, coconut oil and maple syrup. Bring to the boil, stirring constantly, the mixture will start to thicken. Stir in the vanilla. Take off the heat, I used plastic chocolate mould’s to tip the mixture into, but you could use an ice cube tray and tip the fudge mixture into each square to make small fudge bites. Put into the freezer to set for 2 hours, and store in the freezer or they’ll melt.
