Lemon chicken stir fry

Ingredients

  • 2 skinless chicken breasts, sliced into bite sized pieces

  • 1 Tbsp tapioca flour (or corn flour if you don’t have tapioca)

  • 1 Tbsp crushed garlic

  • Dash of oil for the pan (or coconut oil)

  • 1/2 C chicken or vege stock

  • 1 large broccoli, chopped

  • 2 yellow capsicum, sliced up

  • 1 Tbsp tamari sauce

  • 2 Tbsp honey (melted)

  • 1/4 C lemon juice (about 1 lemon)

  • Brown rice to serve on the side

Directions

Mix the chicken pieces in a bowl with the flour until it’s all covered (add a wee bit more if needed). Heat the oil in a frying pan, add garlic for a minute, then add chicken and start to cook through. In a bowl mix together honey, tamari and lemon juice, tip into the chicken. Add the stock and veges, stir & leave to simmer until the broccoli is cooked and the sauce thickens up. Serve with the brown rice. Serves 2-3.
