Crispy hasselback potatoes

Ingredients

  • 6 medium sized potatoes

  • 3 garlic cloves, crushed

  • 4 Tbsp olive oil

  • 1 Tbsp butter, melted

  • 1/4 tsp Himalayan salt

  • Pinch of pepper

  • 1/4 C parmesan cheese

  • 1/4 C parsley, finely chopped

Directions

Preheat oven to 180 degrees. Wash the potatoes and place slices through them (as pictured), don’t cut all the way through. In a bowl mix garlic, olive oil, butter, salt & pepper. Place the potatoes on a baking tray and drizzle the dressing mixture over them, then put into the oven for approx 30 mins. Take out and sprinkle parmesan and parsley over the potatoes, then put back in until the potatoes are cooked through, golden and crispy. Serve warm as a side with some lean protein and a salad.
