Creamy avocado dressing
Ingredients
1 large avocado
1 clove garlic, peeled
1/2 Tbsp lemon juice
3 Tbsp olive oil (or avocado oil)
Good crack of salt & pepper to taste
Water as needed (I add up to 1/4 cup)
Directions
Put all ingredients except the water into a bowl. Using a stick blender, blitz until smooth. Add the little bit of water to thin it out. This dressing will keep in the fridge for maybe a day but probably no more with the avocado. Best to make it and use it while fresh. YUM!
