Colourful brown rice salad

Ingredients

  • 1 1/2 C brown rice

  • 3 spring onions, finely chopped

  • 3/4 C raisins

  • 2 Tbsp chopped parsley

  • 1 can corn kernels, drained

  • 1 can chick peas, drained

  • 1 medium grated carrot

  • 3 sticks celery, finely chopped

  • Dressing: 1/2 C olive oil, 2 Tbsp soy sauce, 1 Tbsp lemon juice, 2 tsp coconut sugar, 1 clove crushed garlic,

     

Directions

Cook brown rice as per instructions.  Place in a bowl and add remaining ingredients, toss thoroughly before serving.  To make the dressing, place all ingredients into a jar and shake well to blend.  Pour dressing over and mix just before serving.  Serves 6-8 as a side. 

Tip for your ginger:  Buy fresh ginger, peel it at home and put into the freezer.  Frozen ginger is much easier to grate than fresh, and you’ll always have it on hand!
