Chocolate Coconut Nut Slice

Ingredients

Nutty base

  • 1⁄2 C Walnuts

  • 1⁄2 C Almonds

  • 1 tbsp liquid honey

  • 1⁄2 C dates (approx 12)

  • 2 tbsp peanut butter

  • 3⁄4 C desiccated coconut

  • Pinch of salt

Chocolate topping

  • 1/3 C liquid honey

  • 1 tbsp cocoa powder

  • 1 tbsp coconut oil (melted)

  • 1⁄4 C desiccated coconut

Directions

Base: Pre soak the dates in boiling water for about 5 mins. Process the walnuts, almonds, then add the dates and the remainder of the ingredients until it’s all blitzed and it’ll stick together. Line a tin with baking paper and press it down firm into the tin, put in the freezer.

Topping: Mix together all of the ingredients, smooth over the base and return to the freezer to chill. Chop up, I keep this slice in the freezer.
