Choc weetbix slice

Ingredients

  • 2 C Sultanas

  • 4 large Tbsp peanut butter

  • 12 Tbsp desicated coconut

  • 2 Tbsp coconut oil (softened)

  • 8 Weetbix (broken up)

  • 8 Tbsp cocoa powder

  • 3 Tbsp honey (softened)

  • 5 Tbsp rice malt syrup

  • Icing: 12 pieces of dark 72% ghana Whittakers chocolate and 1 Tbsp coconut oil

Directions

Put everything into a food processor, whizz until all combined.  Line a baking tray with baking paper, tip out mixture and press down hard into the tray (about 1cm thick). 

For the icing, melt the chocolate and coconut oil and tip over and smooth with a spatula.  Freeze for an hour to set.  Take out of the freezer, chop up into 24 pieces (this is a double batch recipe). Keep in a container in the freezer so it doesn’t melt.
