Chilli Con Carne

Ingredients

  • 500g lean mince

  • 1 425g can red kidney beans

  • 1 can chopped tomatoes

  • 1 red capsicum, diced finely

  • 1 onion, diced finely

  • 1 stick of celery, finely chopped

  • 1 large grated carrot

  • 2 garlic cloves, crushed

  • 2 tsp ground coriander

  • 2 tsp cumin

  • 1 fresh chilli / dried chilli (optional depending on your taste buds!)

  • Rapeseed oil (or high heat cooking olive oil)

Directions

Heat a medium pan, add oil and cook onion, garlic and capsicum. Add mince to the pan, once it starts cooking down add the carrot, then the tinned tomatoes & kidney beans. Sprinkle in the spices and chilli, give it a mix up let it simmer for 5 minutes or so.

Serve with brown rice, green vegetables and top with natural yoghurt (heathier option than sour cream).
