Chilli Con Carne
Ingredients
500g lean mince
1 425g can red kidney beans
1 can chopped tomatoes
1 red capsicum, diced finely
1 onion, diced finely
1 stick of celery, finely chopped
1 large grated carrot
2 garlic cloves, crushed
2 tsp ground coriander
2 tsp cumin
1 fresh chilli / dried chilli (optional depending on your taste buds!)
Rapeseed oil (or high heat cooking olive oil)
Directions
Heat a medium pan, add oil and cook onion, garlic and capsicum. Add mince to the pan, once it starts cooking down add the carrot, then the tinned tomatoes & kidney beans. Sprinkle in the spices and chilli, give it a mix up let it simmer for 5 minutes or so.
Serve with brown rice, green vegetables and top with natural yoghurt (heathier option than sour cream).
