Chicken and asparagus tray bake

The asparagus season is short but the options in the kitchen are endless. This easy tray bake won’t disappoint, pair it with a simple salad and dinner is done!


Ingredients

  • 5 chicken breasts, skin off

  • 1/3 C lemon juice

  • 1/4 C liquid, honey

  • 1 Tbsp soy sauce

  • 3 garlic gloves, crushed

  • Small bunch of parsley, chopped

  • 2 bunches of asparagus, ends snapped

  • Salt and pepper to taste1 lemon, sliced

Directions

Heat oven to 180C . Arrange the chicken in a large roasting dish. Rub with olive oil and season with salt and pepper. In a bowl combine the lemon juice, honey, soy sauce, garlic, half the parsley and salt and pepper. Pour 3/4 of the mixture over the chicken, arrange the lemon slices on top. Cover with foil and bake for 20mins, or until the chicken is almost cooked through. Remove the foil and lay the asparagus around the chicken. Pour the final quarter of the lemon mixture over the asparagus and return to the oven until the asparagus and chicken is cooked, 10 minutes. Garnish with the remaining parsley and serve with a side salad. Serves 5-6
