Brown rice, tuna and celery salad
Ingredients
2 C cooked brown rice (or one full packet of Uncle Ben’s 250g microwaveable packet brown/wild rice)
425g tinned tuna in oil
2 celery stalks, finely diced
3 Tbsp soy sauce
1/2 lemon, juice & zest
Large handful chopped fresh parsley
Directions
Toss together in a bowl the rice, celery, soy sauce and parsley. Drain the tuna, keeping the oil, then mix the oil with the lemon juice & zest. Tip the tuna into the other ingredients, stir through, then add the lemon dressing. A quick easy nutritious lunch! Serves 2.
