Breakfast superfood slice
Ingredients
For the base:
2 C oats
1 C slivered almonds
2 bananas (riper the better)
2 Tbsp honey (melted)
1 Tbsp coconut oil (melted)
1 tsp salt
1 tsp cinnamon
1 1/2 tsp vanilla extract
For the topping:
1/2 C oats
1/4 C slivered almonds
1/4 C pumpkin seeds
1 C blueberries (fresh but I used frozen and it turned out fine)
1/4 C coconut milk or almond milk
1/4 tsp cinnamon
Directions
Preheat oven to 180 deg. Line a baking tray with baking paper. Add all base ingredients to food processor until completely combined and wet. Pour into pan and smooth out with a spatula evenly (about 1cm thick). Bake for 8-10 mins. Meanwhile combine topping ingredients in a bowl and stir. Remove pan from oven, spread topping over evenly and lightly press into the base. Bake for another approx 15 mins. Chop up into 12 pieces. I kept mine in a sealed container in the fridge for up to 1 week.
