Bacon mushroom and pesto pasta
Ingredients
Dash of olive oil
1 onion diced
1 clove garlic
200g button mushrooms sliced
5 rashers streaky bacon diced
200ml cream
400g penne pasta of your choice
4 Tbsp pesto
Salt and pepper to taste
Directions
In a boiling pot of water, cook the pasta as per packet instructions. While the pasta is cooking, heat the oil in a frying pan and cook the garlic, onions, mushrooms ad bacon for approx. 5 minutes until they’re all cooked and tender. Turn down the heat, add cream and simmer for a further few minutes until it reduces and thickens. Once the pasta is cooked, drain the water and then stir through the pesto. Gently stir through the mushroom bacon mix through the pesto pasta. Serve and enjoy serves 4 - 6. Comfort food at it’s best, for those cold wintery nights. YUM!
