Green vegetables and why they are important

Eating your greens! Today I’m going to cover WHY it’s important to eat our greens, in particular the cruciferous veggies. This is the group that includes broccoli, cabbage, kale, bok choy, arugula, brussels sprouts, collards, watercress, radishes & cauliflower (though they aren’t green, they still fall into this category).

Green vegetables share several nutritional benefits, being rich in vitamins and minerals such as folate and vitamin K. Dark green cruciferous veggies also are a source of vitamins A and C and contain phytonutrients — plant-based compounds that may help to lower inflammation and reduce the risk of developing cancer. Our latest ‘chats with Sarah’ video was all about fibre, well cruciferous vegetables are also rich in soluble fibre, winning!

We talk a lot about ‘Eating the rainbow’, well green is definitely a colour you want on your plate! Aim to add something green to your plate whenever you can, your body will thank you for it!
